This January, embark on a transformative culinary journey at The Castle Hotel Windsor's restaurant: Leaf. This month, Leaf will be celebrating all things Veganuary for the second year running as it launches a delicious plant-based three-course menu. Aligned with the global movement advocating for a shift towards a plant-based lifestyle, Veganuary resonates deeply with The Castle Hotel's commitment to environmental sustainability and wellbeing.
Every dish has been thoughtfully curated by head chef, Suraj Lokhande. Being a vegetarian, Suraj is extremely passionate about offering delicious plant-based dishes that never compromise on delicious taste or flavour. Seasonal delights include Japanese-style steamed vegetable gyoza and superfood salad with grilled tofu. Main courses include roasted cauliflower steak and winter vegan Wellington, offering a fusion of flavours that elevate plant-based dining to new heights. Guests can end their meal with delectable desserts such as dark chocolate and orange cake or apple and rhubarb crumble, all served with vegan vanilla ice cream.
Leaf is The Castle Hotel's signature restaurant - an independent dining experience in the heart of Windsor which aims to nourish the mind, body and soul with locally sourced produce and healthy dining options. These new plant-based additions will take the total number of vegan-friendly dishes at Leaf to over 50% of the menu, allowing guests to choose a variety of plant-based options during January.
Commenting on the new menu, Sam Goss, general manager of The Castle Hotel said: "After such a popular response last year, we wanted to further elevate and develop this year's Veganuary menu. It is such an important part of our sustainability journey and, now that we hold a Gold Green Tourism award – which we won last August, we want to further improve our scores and continue on our path towards further sustainability credentials".
Suraj Lokhande, head chef at Leaf added: "It's incredibly important to me to offer fun, exciting and delicious vegetarian and vegan options at Leaf. I love creating dishes that celebrate Veganuary and hope to introduce these options to our à la carte dining menu."
